<b>Folhas de Chocolate</b><br />
<br />
* Chocolate 200 g<br />
* Folhas (biologicas)<br />
<br />
Escolher folhas sãs, sem insectos ou doenças e cortar conservando um bocadinho do tronco.<br />
Derreter o chocolate em banho-maria e mexer bem até ficar com um aspecto liso e brilhante.<br />
Lavar muito bem e com um pano secar as folhas escolhidas, com um pincel, ou uma colher de sobremesa preencher o reverso das folhas com o chocolate derretido.<br />
Colocar as folhas de chocolate sobre papel vegetal e deixar secar, se necessário levar um ou dois minutos ao frigorifico.<br />
Depois do chocolate seco e firme, descole com muito cuidado com a ajuda da ponta de uma faca.<br />
Obterá assim folhas de chocolate como as que vê no bolo.<br />

Para uma “paellera” picam-se finamente 3 dentes de alhos e uma cebola, dois tomates pequenos maduros limpos de peles e sementes aos bocadinhos, um pimento vermelho às tirinhas, uma folha de louro, salsa, picante, azeite, levamos ao lume e juntamos em seguida as lulas cortadas em aros, deixam-se fritar um pouco e regam-se com vinho branco, adicionam-se as ervilhas (uma mão cheia) e deixamos estufar em lume brando.<br />

À parte depois de limpas e depuradas levamos ao lume a abrir as amêijoas, côa-se o caldo e reserva-se.<br />
Numa frigideira com azeite e dentes de alhos picados e dá-se uma breve fritura aos camarões, regam-se com um bom golpe de brandy e flameja-se. Reserva-se.<br />
<br />
Quando as lulas estiverem estufadas junta-se um pouco de caldo de peixe onde se diluiu uma colher de café de açafrão, junta-se o arroz e a meio da cozedura juntamos as amêijoas (miolo) e os camarões com os seus respectivos caldos.<br />

* 4 gemas<br />
* 150 g de açúcar<br />
* 125 g farinha c/ fermento<br />

Misturar a farinha peneirada em chuva e envoler levemente em movimentos delicados.<br />
Verter a massa para a forma e levar ao forno cerca de 20 a 25 minutos.<br />

* Açúcar a gosto <br />

<b>Preparação</b><br />
<br />
Fatiar o pão que deve ser de véspera, amornar o leite com a pitada de baunilha e o açúcar a gosto.<br />
Passar as fatias de pão uma a uma, pelo leite até embeber e colocar com cuidado num prato. Reservar.<br />
Aquecer o óleo, passar as fatias pelos ovos ligeiramente batidos e fritar. (escorrer sobre papel absorvente).<br />

Depois de frias regar com calda de açúcar.<br />

</div><div class="separator" style="clear: both; font-family: inherit; text-align: left;">Bata o <b>açúcar </b> com a manteiga, numa tigela previamente aquecida com água a ferver, junte os ovos um a um. Adicione de seguida a farinha peneirada com o fermento em pó e a canela e mexa bem até que a farinha seja totalmente absorvida na massa.</div>As frutas cristalizadas e as passas devem ficar de molho na água morna e no rum, cerca de 2 horas. Enxugam-se, picam--se e passam-se por farinha. Adicione de seguida à massa, evitando assim que se depositem no fundo. Deite o miolo de noz picado, as raspas de limão e laranja, e envolva. Leve a cozer em forma rectangular, tendo o cuidado de forrar com papel vegetal o fundo da forma e untar muito bem com margarina e polvilhar com farinha. Decore com as amêndoas, coloque a cozer no forno a 180ºC durante 45 a 50 minutos. Se vir que está a tostar demasiado, por cima, cubra com um pouco de papel de alumínio. Quando acabar de sair do forno, pincele o bolo com mel previamente aquecido e decore com amedoas torradas.<br />

Batem- se muito bem as gemas com o açúcar até triplicar de volume e as claras em castelo.<br />
Peneira-se a farinha e mistura-se com o miolo de nozes ralado.<br />
Juntam-se alternadamente em movimentos leves as claras batidas e as nozes onde foi incorporada a farinha..<br />
Põe-se o preparado numa forma ( 26 cm de diam.) untada e polvilhada com farinha e leva-se ao forno pré aquecido (180º) até cozer.<br />
Depois do bolo cozido, retira-se do forno e depois de frio corta-se o bolo em duas metades que se regam com um pouco de Vinho do Porto, recheia-se e cobre-se com Chantilly.<br />
Decora-se a gosto neste caso com fios de ovos (de compra).<br />

Escolhem-se os salmonetes de tamanho pequeno, (são mais gostosos na minha opinião) amanham-se e dão-se-lhes pequenos golpes na pele (pouco profundos) para a pele não rebentar, temperam-se com sal e sumo de limão. Reservam-se uma hora no frio.<br />
Passam-se os salmonetes por leite frio e em seguida por farinha. Coram-se dos dois lados numa frigideira com o fundo coberto de azeite ou óleo.<br />
Colocam-se num tabuleiro ou pirex, regam-se com sumo de limão e pimenta moida no momento e levam-se ao forno a acabar de passar, com nozinhas de manteiga por cima e algumas alcaparras.<br />
<br />
Fritam-se rodelas de tomate, colocam-se em cima dos salmonetes e sobre o tomate, uma rodela de limão e uma azeitona.<br />
Servem-se os salmonetes acompanhados de batatas cozidas e o seu próprio molho.<br />
